Thumbprint Cookie with Grape Jam - Recipe
Ingredients
1 cup unsalted butter (room temperature)
1 cup granulated sugar
1 large eggs
1 teaspoons vanilla extract
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
grape jam (or any flavor jam you like)
Instructions
1. Preheat oven to 350* Fahrenheit.
2. Cream together butter and sugar until light and fluffy.
3. Add in egg and vanilla. Continue mixing for 3 - 4 minutes.
4. In a separate bowl, combine dry ingredients: salt, baking powder, and flour.
5. Add the dry ingredients to the wet ingredients. Mix until just incorporated. Try not to over-mix.
6. Roll the dough into 1.5" balls. Place 2" apart on a nonstick cookie sheet. (We used a small scoop for smaller cookies that was about 1 tbsp of dough per cookie.)
7. Using your pinky or a small round spoon, make an indent in the dough.
8. Slightly overfill the indent with jam (the jam will flatten out as the cookies bake.) (TIP: Add jam to a zip loc bag and cut the tip of the bag to pipe the jam into the indent.)
9. Bake for 10-12 minutes or until the edges are lightly golden. Remove from oven and let cool for 5 minutes on the baking sheet before transferring to a cooling rack.
10. Enjoy!
We had so many compliments that the cookies reminded people of "how grandma used to make them!". Making memories is our favorite thing to do here at Gracie Lou so these compliments filled our hearts with joy!
